1/2 c. butter 1/2 c. light brown sugar 3/4 c. granulated sugar 1/2 tsp. vanilla 1 egg 2 c. sifted flour Salt 1/4 tsp. baking soda 7 1/4 oz. pkg. pitted dates 1 c. chopped nuts Cream butter; add brown sugar, 1/2 cup granulated sugar, vanilla and egg. Beat until light. Add sifted dry ingredients. Chill until firm enough to roll. To make filling, cut dates in small pieces; bring to boil with remaining 1/4 cup granulated sugar, dash of salt and 1/3 cup water. Simmer for 5 minutes, stirring often. Add nuts; cool. Halve dough; roll each half on waxed (floured) paper into a 9"x12" rectangle. Spread with filling; roll up tightly from end. Wrap in paper. Chill overnight. Slice 1/8" thick. Bake at 375 degrees for 10 minutes. |
