DATE PINWHEEL COOKIES 
1/2 lb. chopped dates
1/3 c. water
1/3 c. sugar
1/2 c. chopped nuts
1/2 c. sugar
1/2 c. brown sugar
1/2 c. shortening
1 beaten egg
1 tsp. vanilla
1/2 c. milk
3 c. flour
1/2 tsp. baking soda
1/4 tsp. salt

Cook dates, water and sugar 5 minutes, cool. Add nuts. Cream sugars and shortening. Add egg, vanilla and milk and mix well. Sift dry ingredients and mix with cream mixture. Divide dough in 2. Roll 1/4" thick on a floured board. Spread date mixture on it. Roll like a jelly roll. Chill overnight. Slice and bake at 350 degrees for 10 to 12 minutes.
