BASIC QUICHE 
1 pie crust, homemade or Pillsbury ready-made
1 c. desired meat, diced turkey, chicken, etc.
1 (4 oz.) can sliced mushrooms, drained
1 c. shredded Swiss cheese (4 oz.)
3 beaten eggs, if deep dish (2 if shallow)
1 (5 1/3 oz.) can evaporated milk (2/3 c.)
1/2 c. diced bell pepper
1/2 c. onion
1/4 c. almonds
1/4 tsp. thyme
Dash of nutmeg
Few dashes of Tabasco
1 tsp. butter

Cook pie crust in ungreased pan for approximately 12 minutes (to dry out) at 350 degrees. Saute onions and pepper in butter. Sprinkle meat and mushrooms onto slightly cooked pie crust and top with cheese.

Combine eggs, milk, sauteed vegetables, thyme, nutmeg, mushrooms and Tabasco. Pour over cheese. Sprinkle almonds on top. Bake at 350 degrees for approximately 30 minutes or until set. Serves 6.
