CHICKEN BROCHETTES 
4 chicken breasts, boned
32 sm. onions
32 cherry tomatoes or 8 med. tomatoes, quartered
2 green peppers, cut into pieces
Mushrooms

MARINADE:

4 tbsp. olive oil
4 tbsp. lemon juice
2 garlic cloves, crushed
1 tbsp. salt
1/4 tsp. cayenne pepper

Mix marinade ingredients in a bowl. Cut chicken into 1 inch cubes and add to marinade. Set aside for at least 2 hours, turning chicken occasionally. Preheat broiler. Put chicken and vegetables in skewers. Broil for 4 minutes on each side, or until meat is cooked. Serve at once.
