AVOCADO & ORANGE TOSSED SALAD 
1/2 c. oil
1 1/2 tsp. shredded orange peel
1/4 c. orange juice
1 1/2 tsp. shredded lemon peel
2 tbsp. lemon juice
2 tbsp. vinegar
4 tsp. sugar or honey
1/2 tsp. dry mustard
1/4 tsp. salt
2 lg. oranges
1 sm. red onion, sliced & separated into rings
1 lg. avocado
8 c. torn greens, use several different kinds of lettuce

In screw-top jar combine oil, orange and lemon peels, juice, vinegar, honey, salt and mustard. Cover and shake well. Peel oranges and remove white membrane. Slice crosswise and cut each slice in thirds. In a bowl, combine orange slices and onion. Pour dressing over all. Stir to coat well. Refrigerate covered.

At serving time, drain orange mixture, reserving dressing. Peel, seed and slice avocado lengthwise. In large salad bowl, arrange orange, onion and avocado atop mixed greens. Drizzle with desired amount of reserved dressing. Toss to coat well. Serves 10.
