BOILED SHRIMP 
1 qt. water
1/2 stalk celery, sliced
1 carrot, sliced
1 sm. white onion, sliced
Juice of 1/2 lemon
1 tsp. salt
1/2 tsp. freshly ground black pepper
1 lb. shrimp, shelled and deveined

In a large saucepan, bring 1 quart of water to a boil. Add the remaining ingredients except the shrimp and boil 15 minutes.

Add the shrimp and simmer, uncovered, until pink, 2 to 5 minutes. Drain or leave the shrimp in the broth until serving time, as desired. Refrigerate.
