MAINE JEMBALAYAK 
2 c. shrimp
1/2 c. ham
2 1/2 c. tomatoes
1 1/2 c. water
1 onion, chopped
1 tbsp. flour
1 green pepper
Garlic, 1/2 clove
Parsley, 1 tbsp.
Rice, 3/4 c. uncooked
Salt
Pepper
2 tbsp. butter

Preheat electric skillet to 350 degrees. Melt butter, stir in flour, add diced green pepper and cooked ham, coarseley chopped. Cook, stirring for 5 minutes. Add tomatoes (canned) water, onion, garlic, salt, pepper, parsley. Bring to boil add rice, reduce heat to 200 to 225 degrees. Simmer for 30 minutes or unti rice is tender, add cooked Maine shrimp just before done.
