BOLOGNA CUPS 
2 tsp. shortening
6 slices bologna, each 4" across
6 eggs
6 tsp. milk
Salt
Pepper
Paprika

Heat oven to 375 degrees. Grease muffin cups with shortening, using pastry brush. Melt 2 teaspoons shortening in skillet, low heat. Place 3 slices bologna in the skillet and fry until the edges curl and the center puff. Lift each slice out with tongs and fit into muffin tin. Press down so it fits cup. Repeat with other 3 bolognas.

Break 1 egg in center of bologna. Pour 1 teaspoon milk over each egg. Sprinkle with salt, pepper and paprika. Bake uncovered at 375 degrees for 15-20 minutes or until egg is set. Loosen cup with knife and lift out.
