HOT, SOFT PRETZELS 
1/8 c. hot water
1 pkg. active dry yeast
1 1/3 c. warm water
1/3 c. brown sugar
5 c. flour
Extra flour
Coarse Kosher salt
Baking soda

Heat oven to 475 degrees. In large bowl, mix hot water and yeast until dissolved. Stir in warm water and brown sugar. Slowly add 5 cups flour and stir constantly. Put dough on lightly floured board and knead dough until stretchy and smooth. Grease 2 cookie sheets and sprinkle each with the Kosher salt. Pinch off a piece of dough; roll and shape into pretzel shape. Fill a frying pan with water and 1 teaspoon baking soda; bring to a boil. Lower each pretzel into frying pan for 30 seconds and put on sheet. Sprinkle with Kosher salt and bake for 8 minutes.
