CHICKEN SCAMPI 
1/2 c. butter
1/4 c. olive oil
1/4 c. finely chopped green onions
1 tbsp. minced garlic
Juice of 1 lemon
2 lb. chicken breasts boned, skinned and cut into 1/2 inch pieces
1 tsp. salt
1/2 tsp. fresh ground black pepper
1/4 c. minced fresh parsley
1 tomato, chopped

In skillet, heat together butter and olive oil and saute green onions and garlic. Add lemon juice, chicken, salt, pepper and parsley. Continue cooking, stirring constantly for 5-8 minutes or until chicken is done. Add tomatoes and heat through. Serve over buttered noodles or hot rice. Makes 4-6 servings.
