ANYTIME BREAKFAST FRITATTA 
This is a SUPER low-cal breakfast entrée. The WHOLE recipe only has 1200 calories, is loaded with protein and fairly low-carb.

1/2 lb. bacon strips, cut into 1-inch pieces (about 8)
1 medium onion, chopped
2 medium Roma tomatoes, chopped
4 eggs, beaten
1/4 cup cold water
1/4 cup baking mix (Bisquick or Jiffy)
1 tsp. seasoned salt (Lawry's)
1 tsp. ground black pepper (or to taste)
1 cup grated Swiss cheese, divided

Mix eggs, water, baking mix and seasonings well. There will be a few lumps and that is normal. Set aside.

Fry bacon pieces over medium heat until just browned. Drain all but about a tablespoon of the fat (I use paper towels to soak it up). Return to heat and add onions. Cover and cook for about 5 minutes, until onions are almost transparent.

Add tomatoes and spread mixture over bottom of pan. Add egg mixture and sprinkle with 1/2 of grated cheese and cover. Continue cooking over medium heat for 5 minutes.

Sprinkle with remaining cheese, remove from heat and let sit for 2 minutes, covered.

Depending on the serving size it can serve anywhere from 4 to 6. Enjoy!
