ZESTY POTATO SALAD 
2 lbs. potatoes
1/4 c. chopped onion
1 tsp. salt
1/4 tsp. pepper (fresh ground if possible)
1/3 c. Italian salad dressing (prefer - Good Seasons Zesty Italian made with red wine vinegar)
1/2 c. chopped celery
1/2 c. mayonnaise
Optional: 2 hard-boiled eggs

Wash and boil potatoes in salted water until tender. Drain and cool, peel if desired then cube. Combine potatoes, onions, salt, pepper and Italian salad dressing; then cover, refrigerate to marinate at least 2 hours (overnight if you have time, stir periodically). Remove, add mayonnaise and other ingredients. Stir well, serve, enjoy!
