NUT CRACKER PIE 
3 egg whites
1 tsp. baking powder
3/4 c. chopped nuts
1 c. sugar
1/2 tsp. vanilla
24 Ritz crackers

Beat egg whites until stiff. Add sugar, baking powder and vanilla. Mix each in well. Fold in nuts. Add cracker crumbs. Mix all carefully and pour into a well greased 8 inch pie plate. Bake 30 minutes at 350 degrees. Let cool in its plate but out of oven. Chill in refrigerator for 2 hours. Serve with ice cream or whipped cream and sprinkle with nuts. Serves 8.
