SKILLET BREAD 
2 c. flour
2 tsp. baking powder
1 1/2 tsp. salt
1 1/2 tsp. sugar
1 1/2 c. cold water
Shortening for frying

Stir dry ingredients together in a bowl. Stir in water until thoroughly combined and batter is smooth.

Melt about 3 tablespoons shortening in large iron skillet over medium-high heat. Drop batter into skillet as you would for a medium size pancake. Cook until golden brown on each side, adding shortening as needed. Center will be moist, outside crispy. Serve hot with butter or use to dip in soups or stews.

Thank you so much for this recipe. My next door neighbor growing up, an elderly lady, used to make skillet bread for me all the time. I loved it! She used to say how easy it was to make, but I never made any myself. Have looked high and low for a recipe that seemed right, but to no avail. Then I ran across yours. It seemed like it could be the one. And it was. Same texture I remember...and same great taste! I could live on this bread. What a great childhood memory, and thanks to you, I can now make it whenever I want. :)
