2 c. flour 2 tsp. baking powder 1 1/2 tsp. salt 1 1/2 tsp. sugar 1 1/2 c. cold water Shortening for frying Stir dry ingredients together in a bowl. Stir in water until thoroughly combined and batter is smooth. Melt about 3 tablespoons shortening in large iron skillet over medium-high heat. Drop batter into skillet as you would for a medium size pancake. Cook until golden brown on each side, adding shortening as needed. Center will be moist, outside crispy. Serve hot with butter or use to dip in soups or stews. |
