HARVARD BEETS 
2 tsp. cornstarch
1/3 c. sugar
1/2 tsp. salt
2/3 c. vinegar
1/3 c. water or liquid from beets
3 c. sliced beets (canned), cook if fresh
2 tbsp. butter

Mix cornstarch with sugar and salt. Stir in vinegar and water. Cook over low heat, stirring constantly until mixture is smooth and thick. Add beets, stir in butter.
