APPLE CAKE (a la Grossigners)
1 c. sifted flour
1/2 tsp. salt
1 1/2 tsp. baking powder
6 tbsp. sugar
1/4 lb. butter
1 egg
1/4 c. milk
4 c. peeled apples, thinly sliced
1 tsp. cinnamon
1/2 c. currant jelly

Sift flour, salt, baking powder and 3 tablespoons sugar into a bowl. Work in half of the butter. Beat egg and milk together and add, mixing until a dough is formed. Pat onto buttered 12x8 inch baking pan. Arrange the thinly sliced apples in rows. Sprinkle with cinnamon and remaining sugar. Melt remaining butter and pour over top.

Bake at 400 degrees approximately 35 minutes or until apples are tender. Brush with melted jelly. When cool, cut into squares.

This is one of our family favorites - served as Rosh Hashanah (Jewish New Year) dessert.
