OATMEAL PANCAKES 
2 eggs
1/2 c. cottage cheese
1 tbsp. oil
1/4 c. plus 2 tbsp. uncooked oatmeal
1/8 tsp. salt
2 tbsp. sugar

Place all ingredients in blender. Blend 5 to 6 seconds. Drop by tablespoons on medium hot griddle. Turn when bubbles appear on surface and cook 1 minute more. Serve with ham, fruit preserves, fresh fruit or berries. Makes four (4 inch) pancakes.
