PEACH RELISH 
16 med. peaches
1 c. raisins
1 1/2 c. packed light brown sugar
3/4 c. cider vinegar
1 tsp. cinnamon
1/2 tsp. ground cloves
2 tsp. mustard seed
1/2 c. coarsely chopped pecans

Peel, pit and slice peaches: 8 cups will be needed. Combine in pot, remaining ingredients, except nuts. Bring to boil and cook, uncovered, 45 minutes or until thick. Add nuts and cook 2 minutes. Fill 6 hot sterilized half-pint jars to within 1/2 inch of top and seal.
