1 lb. ground sirloin (or lean beef) 1-2 cloves garlic, crushed 1 c. ricotta cheese 8 oz. shredded mozzarella cheese 1/2 c. Best Foods mayonnaise 1/2 c. mushrooms, sliced 1/2 c. zucchini, sliced 1 (16 oz.) jar favorite spaghetti sauce 1/2 c. chopped onion 1 box manicotti noodles Parmesan, grated Brown meat with garlic and onion, drain and set aside. Saute mushrooms and zucchini. Add meat mixture. In separate bowl mix ricotta cheese, mayonnaise and 4 ounce mozzarella. Add meat-vegetable mixture, mix thoroughly. Stuff slightly boiled manicotti shell noodles. Lay in pan lined with spaghetti sauce. Cover with extra sauce, mozzarella and grated Parmesan. Cover with foil, bake at 350 degrees for 20 minutes. Remove foil. Bake for 10 minutes more. Serves 5-6. |
