BANANA NUT BREAD 
1/4 c. shortening (I use corn oil)
1/2 c. sugar (I use sorghum)
1 beaten egg
1 c. bran
2 tbsp. orange juice (water will do)
1 1/2 c. mashed bananas
1 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. salt (I don't use salt)
2 tsp. baking powder
1 tsp. vanilla extract
1/2 c. chopped nutmeats

Cream shortening and sugar (or sorghum) and add egg then bran. Combine orange juice and bananas, add alternately with sifted ingredients. Mix thoroughly, add vanilla and nut meats. Bake in greased 1 pound loaf pan, moderate oven 350 degrees for about 1 hour.

For variations: I like to use a box of dates or 1/2 cup raisins. When using either of these I mix dates (or raisins) and nuts together with a tablespoon flour. This keeps them from settling to the bottom of your bread.
