BREAKFAST CASSEROLE 
8 slices bread, cubed
8 eggs
2 c. milk
1 1/2 lbs. whole hog sausage - very lightly seasoned
1/2 lb. shredded Colby cheese
Salt and pepper to taste
1 sm. can mushrooms, stems and pieces, drained
1/4 c. chopped onion

Brown sausage - drain. Put cubed bread in bottom of a 9 x 13 inch pan. Sprinkle drained sausage over bread. Whip eggs with milk - add seasonings, mushrooms and onion - pour egg mixture over sausage-bread. Sprinkle cheese over entire mixture. Press down gently - refrigerate overnight or at least 6 hours. Bake at 350 degrees for 45-60 minutes. Cool 10 to 15 minutes before serving.
