BREAST OF CHICKEN WITH MUSHROOMS 
4 pieces boned chicken
12 saltine crackers (crushed with 1/2 tsp. salt, 1/4 tsp. pepper and 1 tsp. tarragon)
3/4 c. butter
1/2 c. chopped onion
2 (4 oz.) cans mushrooms
1 can chicken broth
1 c. dry white wine

Dip chicken in crushed crackers (let stand 15 minutes). Brown chicken lightly in butter and put in shallow baking dish. In same pan, saute onion and mushrooms. Add chicken broth and wine. Pour over chicken and bake uncovered for 45 minutes at 375 degrees. Serve over rice.
