OVEN - FRIED HERBED POTATOES 
2 lb. russet potatoes, cut into 2" cubes
6 tbsp. olive oil
4 cloves garlic, minced
2 tbsp. minced fresh parsley
1 tsp. dried basil, crumbled
1 tsp. dried oregano, crumbled
Pepper
Salt

Preheat oven to 350 degrees. Combine potatoes, oil, garlic, herbs and pepper in large bowl and toss to coat. Spread potatoes in single layer in baking pan. Bake until brown and cooked through, turning once, about 1 hour. Season potatoes to taste with salt and serve immediately. Serves 2. This recipe doubles easily.
