OLD FASHIONED CHILI - CHASEN'S 
1 lb. pinto beans
1 1/2 tbsp. salad oil
1 1/2 lbs. chopped chopped onion
1/2 c. chopped parsley
2 1/2 lbs. lean ground beef chuck (coarse better)
1 lb. ground lean pork
2 tbsp. salt
1 1/2 tsp. cumin seed
5 c. canned tomatoes
1 lb. chopped green peppers
2 cloves crushed garlic
1/2 c. butter
1/3 c. chili powder
1 1/2 tsp. pepper

Wash beans and soak overnight in water. Simmer covered in same water until tender. Add tomatoes and simmer for five minutes. Saute green pepper in oil for 5 minutes. Add onion until tender, stirring often. Add garlic and parsley. Melt butter and saute meat for 15 minutes Add meat to onion mixture; stir in chili powder and cook 10 minutes. Add all this to beans and add spices. Simmer covered for one hour. Cook uncovered for 10 minutes. Skim fat from top.
