BEETS IN ORANGE SAUCE 
6 med. sized raw beets
2 tbsp. cold water
1 tbsp. cornstarch
1 tbsp. lemon juice
2 tbsp. honey
1/2 c. orange juice
2 tsp. grated orange peel

Cook beets until tender, then peel and slice.

Prepare sauce: Mix cornstarch and water; set aside. Blend honey, lemon juice, orange juice, and grated orange peel in a saucepan. Stir in cornstarch and water mixture; cook, stirring, over medium heat until sauce thickens. Stir in beets and heat thoroughly. Serve immediately. Makes 4 servings.
