BEEF PARMIGIANA 
1 1/2 - 2 lb. beef round steak, 3/4" thick, cut into 6 pieces
3 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1 egg, slightly beaten
1 tbsp. water
1/2 c. fine dry bread crumbs
1/2 tsp. basil leaves
3 tbsp. cooking oil
1 (15 1/2 oz.) can tomatoes
1 (8 oz.) can tomato sauce
1/4 c. grated Parmesan cheese
2 tbsp. red wine
1 tsp. sugar
1/2 tsp. leaf oregano
1/4 tsp. salt
2 oz. Mozzarella or cheddar cheese

Mix flour, salt and pepper. Dredge and pound meat pieces in it. Mix egg and water in one bowl, bread crumbs and basil in another. Dip the pounded meat into the egg mixture and then into the bread crumbs.

Heat oil. Brown meat in it. Combine next 7 ingredients and pour over meat placed in 13"x9"x2" pan. Cover with foil. Bake at 350 degrees for 1 1/2 hours. Sprinkle with cheese and bake 5 minutes longer.
