MOM'S HOMINY CREOLE 
2 cans hominy
1 lb. bulk pork sausage
1 (15 1/2 oz.) can tomato sauce or stewed tomatoes
Chopped white onion
Chopped green bell pepper
Salt & pepper
Saltine cracker crumbs

Saute sausage, green pepper and onion. Add hominy, tomato sauce and seasoning. Cover with cracker crumbs. Bake in greased 13"x9" dish for 40 minutes at 350 degrees.
