LIME CREAM 
2 envelopes unflavored gelatin
1 c. milk
8 egg yolks
1 c. sugar
1 qt. half and half
2 to 3 tsp. grated lime rind
1/2 c. lime juice
Lime slices (optional)
Lime rind (optional)

Soften gelatin in milk; let stand 5 minutes. Beat egg yolks and sugar at medium-high speed of an electric mixer until thick and lemon colored. Add half- and-half; mix well. Cook over low heat, stirring constantly, until mixture thickens and coats a spoon (about 10 minutes).

Remove from heat; add gelatin mixture, stirring until gelatin dissolves. Gradually stir in lime rind and lime juice; cool. Pour into a lightly oiled 8- cup mold; chill 8 hours. Unmold on serving platter. Garnish with lime slices and rind, if desired. Yield: 10 servings.
