APPLE SPICED CHICKEN | |
1 (2 1/2 to 3 lb.) broiler-fryer chicken, quartered Cooking oil 1/4 c. apple jelly 1 tbsp. lemon juice 1/2 tsp. ground allspice Break joints of chicken. Brush chicken with oil; season with salt and pepper. Place in broiler pan, skin side down. Broil 5 to 6 inches from heat about 20 minutes or until lightly browned. Turn, broil 15 to 20 minutes until done. Meanwhile, for glaze, melt jelly, stir in lemon juice and allspice. Brush meat with half the glaze; broil 1 to 2 minutes more. Serves 4. |
