APPLE CHICKEN CURRY 
1/4 c. butter
1 whole chicken
2-3 apples, diced
1/2 c. diced onion
2 tbsp. flour
2 tbsp. curry powder
1 1/2 c. or 1 can chicken broth

Cut chicken into serving pieces or 2 whole chicken breasts, boned and cubed.

Brown chicken in butter. Remove if using whole pieces. Saute apple and onion until softened, sprinkle on flour and curry powder. Stir in chicken broth; return chicken to pan. Cover and simmer until done, 25-35 minutes. Serve over rice with additional condiments, if desired (chutney, peanuts, bananas, bacon, etc.)
