OATMEAL RAISIN PUDDING COOKIES 
1 1/4 c. unsifted all purpose flour
1 tsp. baking soda
1 c. butter, softened
1/4 c. granulated sugar
3/4 c. firmly packed brown sugar
1 (4 serving size) pkg. Jello brand vanilla instant pudding mix
2 eggs
3 1/2 c. quick cooking rolled oats
1 c. raisins; optional
1 c. chopped nuts; optional

Mix flour with soda. Combine butter, sugars, and pudding mix in larger mixer bowl. Beat until smooth and creamy, beat in eggs, gradually add flour mixture; then stir in oats, raisins, and nuts. Batter will be stiff.

Use ungreased baking sheet. Bake at 375 degrees for 10-12 minutes.
