GERMAN APPLE COFFEE CAKE 
1 c. sweet butter
3/4 c. sugar
3 lg. eggs
Grated rind and juice of 1 lemon
1 1/4 c. flour
1/2 tsp. baking powder
2 lg. apples

In large bowl, cream softened butter. Slowly add sugar, one egg at a time, until mixture is fluffy. Stir in lemon juice and rind. Sift flour and baking powder together and add to mixture gradually. Pour batter into greased 10-inch springform pan, spread evenly.

Preheat oven to 350 degrees. Cut apples into 8 pieces, peel and arrange peeled side up (pinwheel) on top of dough. Bake in preheated oven for approximately 50 minutes.
