"BETTY'S" MEAT LOAF 
2 lb. pkg. ground beef
10 saltines, crumbled
1 egg
2/3+ c. catsup
1 lg. bell pepper, chopped
Salt & pepper
1 chopped onion
1 can tomatoes or 1 can tomato sauce with onions
2 stalks of celery, chopped
Dash of sugar, salt, pepper

Mix together in bowl ground beef, saltines, egg, catsup, salt and pepper and 1/2 diced bell pepper. Separate into 3 equal parts to make loaves. Brown loaves in hot, salted roaster pan.

Reduce heat to simmer, add the following to make gravy: other half of diced bell pepper, chopped onion, celery, tomatoes, additional catsup if needed, salt, pepper and dash of sugar. Simmer gravy and loaves on low heat until done. If it needs thickening, add cornstarch with flour. Serve meatloaf gravy over rice.
