CHICKEN PARMESAN 
2 lbs. skinless, boneless chicken breast
2 eggs
1 tsp. salt
1/2 c. vegetable oil
1/4 tsp. basil
1 tbsp. butter
1 1/2 c. Mozzarella cheese
1/8 tsp. pepper
2 c. bread crumbs
29 oz. tomato sauce
1/8 tsp. garlic powder
1/2 c. Parmesan cheese

Heat oil in fry pan until very hot. Mix eggs, salt and pepper together and dip chicken pieces into mixture, then in bread crumbs. Quickly fry in hot oil on both sides; drain on paper towels. Pour oil out of fry pan.

Put chicken in 9x13 pan. Put tomato sauce, garlic and basil into fry pan, heating. Add butter; pour over chicken and top with Parmesan cheese. Bake covered at 350 degrees for 45 minutes. Remove cover and top with Mozzarella cheese and return to oven for another 15 minutes.
