1 c. prepared Italian salad dressing 2 lb. boneless chuck steak, cut 1 in. thick 1 (16 oz.) can whole tomatoes 1 lb. fresh green beans, cut diagonally 1 med. eggplant, cut into 1/2 in. slices 1 med. onion, chopped 1 lb. fresh mushrooms, sliced Marinate steak in 1/2 cup Italian salad dressing in shallow baking dish for about 3 hours, turning occasionally. Add green beans, onion and remaining Italian dressing and marinate another 3 hours. In large skillet, brown beef; add half the marinade and simmer covered for 45 minutes. Add can of tomatoes and vegetables in marinade sauce and continue to simmer another 40 minutes covered, add eggplant and simmer 20 minutes. During last 10 minutes of cooking time, add mushrooms. Serve with rice, noodles, or mashed potatoes. Makes 4 servings. |
