BACON AND CHEESE OMELET 
12 slices bacon
6 slices yellow cheese
8 eggs, beaten
1 c. milk

Cook bacon and drain. Form a curl with 1 piece. Chop 4 slices. Leave the remaining 7 slices whole. Cut cheese into 1/2 and arrange in the bottom of a lightly buttered 9 inch pie plate.

Beat eggs and milk with a fork. Add chopped bacon. Pour over cheese and bake at 350 degrees for 30 minutes.

Arrange whole bacon slices on top of omelet. Place bacon curl in center. Bake 10 minutes more. Let stand 5 minutes before cutting. Serves 6.
