ZUCCHINI CASSEROLE 
1 lb. pork sausage, crumbled
1 c. chopped green pepper
1/2 c. chicken broth
1 1/2 lbs. zucchini, peeled and diced
1 c. grated cheese (Cheddar)
1 c. chopped onion
1 can cream of chicken soup
1/4 tsp. garlic powder
3 c. cooked rice

Fry and drain sausage. Cook rice. Saute onions and green peppers in butter until tender and crisp. In large bowl, mix ingredients, except cheese. Put in two large oven-proof pans. Bake 40 minutes at 350 degrees, covered. Last 20 minutes, add cheese and bake, uncovered, until cheese bubbles.
