PINEAPPLE WHIP 
1 tbsp. gelatin
Artificial sweetener equivalent to 2 tsp. sugar
1/8 tsp. salt
1/2 c. pineapple juice
1 1/4 c. pineapple juice
1/2 tsp. grated lemon rind

Mix gelatin, artificial sweetener and salt. Add 1/2 cup pineapple juice. Place mixture over low heat, stirring until gelatin is dissolved. Remove from heat. Stir in 1 1/4 cups pineapple juice. Chill until slightly thicker than unbeaten egg white consistency. Beat until light and fluffy in volume. Spoon into dessert dishes and chill until firm.
