BOILED CRAWFISH 
1 1/2 qt. liquid crab boil
5 boxes salt
Red pepper to taste
1 c. lemon juice
Water
1/2 c. cooking oil

You need 2 huge pots with baskets in them about 92 quart size. Fill one 1/2 full of water and add crab boil, salt, red pepper and lemon juice. Heat this seasoned water to a boil, set off of fire.

In the other pot fill 1/2 full of water, add cooking oil. Bring this to a rolling boil. Add about 40 pounds of crawfish that has been washed. Bring back to a boil as fast as you can. Cook 3 to 5 minutes. Take out of this water and put into seasoned water to soak for 5 to 10 minutes. Take out of seasoned water. Put in ice chest and sprinkle with Tony Chachere's crab boil. It is in blue container instead of green.
