MANGO NUT BREAD 
1/2 c. butter
3/4 c. sugar
2 eggs
1 c. mango, chopped finely or pureed
1 tbsp. lemon juice
2 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/4 tsp. vanilla
1/2 c. chopped nuts
1/2 c. chopped raisins

Cream together butter and sugar; beat in eggs. Stir in mango and lemon juice. Combine dry ingredients and stir into mango mixture. Add vanilla, nuts, and raisins.

Bake in a greased loaf pan at 375°F for 50 minutes or until a wooden skewer inserted in the center of cake comes out clean. Cool on wire cake racks.

This bread freezes very well.
