GREAT MANGO BREAD | |
2 cups all-purpose flour 1 1/4 cups granulated sugar 2 tsp. baking soda 1 1/2 tsp. ground cinnamon 1/2 tsp. salt 1/2 cup mango juice (sold in a small can in the Asian aisle) 1/4 cup vegetable oil (if cannot find mango juice, use 3/4 cup) 3 eggs 2 tsp. honey 2 tsp. pure vanilla extract 1/4 cup pureed mangoes 2 3/4 cups diced mangoes 1 cup chopped walnuts or macadamia nuts Preheat oven to 350°F. Grease a 13x9x2-inch pan or two 9x5-inch loaf pans. In a large bowl, sift together flour, sugar, baking soda, cinnamon, and salt; mix well. In a medium bowl, combine mango juice, vegetable oil, eggs, honey, and vanilla; mix well. Slowly add to dry ingredients. Stir in pureed mango. Fold in diced mango and chopped nuts. Pour into pans and bake for 50 to 60 minutes. Note: If using 13x9x2-inch pan, cut like cake into pieces and serve warm with vanilla bean ice cream. Submitted by: Jzordyn Aeris |
