SHRIMP FRIED RICE 
6 eggs, beaten
1 lb. shrimp
1 c. onions, chopped
1 c. bell pepper, chopped
1/4 c. green onion, chopped
1 sm. can mushrooms
2 c. cooked rice
1 block butter
1 tbsp. Tony's seasoning
1 tsp. salt
Black pepper to taste

Saute onions, bell pepper, green onions and mushrooms in butter until clear. Season shrimp with seasoning and add to vegetables. Cook on medium heat until shrimp are pink. Pour beaten eggs into shrimp and vegetable mix. Add rice and stir until rice is coated with egg mix. Cover and cook on low heat until eggs are cooked. Makes four 1 cup servings.
