COQ AU VIN | |
1 cut up chicken, 3 lbs. 1/2 c. flour 1/4 c. oil 1 c. green onions, sliced thin 2 tbsp. chopped parsley 1/2 c. mushrooms, sliced thin 1 dried bay leaf 1/8 tsp. thyme 1/8 tsp. marjoram Dash of Worcestershire sauce 1 c. dry white wine or dry vermouth Shake chicken in flour seasoned with salt and pepper. Brown chicken in oil; transfer to a baking dish. Remove all but 3 tablespoons fat. Saute onions and mushrooms until golden brown. Add wine, parsley, thyme, marjoram, Worcestershire sauce and bay leaf, crumbled. Simmer 3 to 5 minutes. Pour over chicken. Cover. Bake at 300 degrees for 1 to 1 1/4 hours. |
