APPLE CRUMBLE 
1 1/2 lbs. cooking apples
1/3 c. water
3/4 c. brown sugar
2 tsp. grated lemon rind
1/2 c. butter
1 1/4 c. flour
1/2 c. sugar
1/4 tsp. ginger
1/2 tsp. cinnamon

1. Peel, core and slice the apples.

2. Combine the water, sugar and lemon rind in a saucepan. Add the apple slices and cook, covered, until soft. Put into a well buttered pie tin.

3. Combine butter, flour, sugar, ginger and cinnamon. Mix until mixture looks like fine bread crumbs. Sprinkle over the apples.

4. Bake in a 350 degree oven for about 1/2 hour or until golden brown. Serve warm. Serves 4 to 6.
