OVEN FRIED CHICKEN | |
1 (2 1/2 - 3 lb.) broiler-fryer, cut up 1/3 c. all purpose flour 1 tsp. salt Dash pepper 1 egg 2 tbsp. water 3/4 c. corn flake crumbs 1/4 c. (1 oz.) grated Parmesan cheese 1/4 c. butter, melted Coat chicken with combined flour and seasoning. Dip chicken in combined egg and water; coat with combined crumbs and cheese. Place in a 13"x9" baking pan, drizzle butter over chicken. Bake at 375 degrees for 1 hour or until tender. Yield: 4 servings. |
