BAKED ZUCCHINI 
2 lbs. zucchini
1/4 tsp. pepper
1/3 lb. bacon
1/2 tsp. basil
3 med. onions
3 tbsp. catsup
1 1/2 tsp. salt

Wash but do not peel zucchini. Cut into chunks. Fry bacon and cut into pieces. Add onion and cook 5 minutes, stirring often. Put a layer of zucchini into 1 quart casserole and sprinkle with salt, pepper and basil. Dot with catsup and cover with layers of onions and bacon. Repeat until casserole is filled, ending with bacon and onions. Dot with catsup and bake covered in a moderate 350 degree oven for 45 to 60 minutes. Or microwave on high until zucchini is tender. Stir occasionally.

Since microwave ovens vary in power, you may need to adjust your cooking time.
