BAKED ZUCCHINI 
3 to 4 slices bacon, cut in sm. pieces
1 med. onion, chopped
1/2 c. finely chopped celery
1/2 c. green pepper strips
3 c. sliced zucchini
1 c. tomato, diced
1/2 tsp. rosemary
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. butter
Crumbs of 6 to 8 crackers
Grated Parmesan cheese

Saute bacon, onion, celery, pepper in butter. Put zucchini and tomato in casserole dish. Cover with sauteed mixture. Sprinkle with cracker crumbs and Parmesan cheese. Bake in covered casserole 1 hour at 350 degrees.
