CHICKEN JAMBALIA 
1 chicken
1/2 c. olive oil
2 c. chopped onion
1 c. bell pepper
1 c. celery
1 c. smoked sausage
3 c. long grain brown rice
2 tbsp. salt
Dash of Tabasco sauce
4 c. water
2 chopped cloves garlic

In a large saucepan heat oil and brown chicken, cut up in small pieces. Brown onion, pepper and celery. Add sausage and rice; simmer 15 minutes. Add salt, Tabasco sauce, water and garlic. Mix well, cook for 1 hour. Do Not uncover.
