BANANA - DATE LOAF 
3/4 c. sugar
1/2 c. Lenten shortening
1 c. (about 3) mashed bananas
1 tbsp. lemon juice
1 3/4 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 c. cut up pitted dates
1 c. chopped nuts

Cream sugar and shortening thoroughly. Add bananas and lemon juice, mixing well. Sift flour, soda, and salt. Add dry ingredients, dates, and nuts to creamed mixture, stirring just until all flour is moistened. Spread in a well greased 9 x 5 x 3 inch loaf pan. Bake for 60 minutes in a 350 degree oven.
