CURRY MUTTON (JAMAICAN STYLE) | |
1 lb. shoulder of mutton, cut in sm. pieces 1 tsp. curry powder, or more if desired 1 tbsp. cooking oil 1 med. sliced onion 1 hot pepper, cut up, omit seeds 1 c. hot water 1/2 c. diced potato Season meat with salt, pepper, onion, curry powder and allow to stand for about 1 hour. Heat fat in skillet. Add meat with seasoning. Cover and allow to cook in hot oil for about 20 minutes. Stir occasionally. Add water and potatoes, cover tightly, cook on low flame until meat is tender and gravy is thicken. Add more water if necessary, serve hot over cooked rice. |
